Do you also get excited when you see the waiter taking a hot, sizzling, fragrant plate towards someone’s table? The excitement doubles when we see it coming to our table! The idea behind it is to serve food hot by making it crisp on the outside and keeping it moist on the inside. That could only happen as long as the dish was cooking and just 2 minutes after it was taken out to serve. So, the idea of a hot, cooking plate came in. but thinking that sizzlers can only be limited to restaurants would be wrong. You can also make them at home. Now if you have a sizzler tray or an iron skillet or plate, you can serve the dish in that otherwise, it tastes pretty good on simple plates too.
Grilled Chicken:
• Chicken boneless 400g (breast)
• For marination:
1. Salt & black pepper powder to taste
2. Ginger garlic paste 1 tbsp (each)
3. Light soy sauce 1 tbsp
4. Lemon juice (half of a lemon)
• Oil for grilling
Method:
Wash the chicken well, now slice the chicken breast keeping the knife diagonally. Transfer the sliced chicken in a mixing bowl, add the marinated ingredients and mix well, keep it marinated for 30 minutes. After marinating, set a grill pan or any pan on medium heat, add oil and grill the chicken slices on both the sides until cooked and tender, make sure the pan is hot enough while grilling.
Pepper garlic sauce:
Butter 1tbsp
Oil 2 tbsp
Onions 1 medium large (chopped)
Garlic 2tbsp (chopped)
Ginger 1 tbsp (chopped)
Green chillies 2-3 nos. (chopped)
Refined flour 1 tbsp
Hot water/chicken stock 1.5 cup
Soy sauce 1 tbsp
Ketchup 1 tbsp
Salt to taste
Peppercorns ½ tbsp
Method:
Set a wok on medium heat add oil, onions, garlic, ginger and green chillies stir & cook for 3-4 minutes. Low down the flame and add, refined flour, stir and cook for 2-3 minutes. Further add soy sauce, ketchup, salt to taste and freshly grounded black peppercorns further add hot water/chicken stock, Add the stock gradually while stirring continuously. Mix and cook until the sauce thickens.
For sautéed veggies Ingredients:
• Butter 1 tbsp
• Garlic 1 tbsp (chopped)
• French beans 50gm
• Carrots 50gm
• Red Bell pepper 10gm
• Yellow Bell pepper 10gm
• Green Capsicum 10gm
• Salt & Black pepper powder to taste
Methods:
Set a wok on low heat, add butter, add garlic, stir and cook for 1-2 minutes on low flame. Further, increase the flame to high heat, add the veggies, salt & black pepper powder to taste, stir and cook for 1-2 minutes on high heat. Sautéed veggies are ready, serve hot on a sizzler platter.
For herbed rice Ingredients:
• Butter 1 tsp
• Garlic 1tsp
• parsley 30gm (chopped)
• Cooked rice 2 cups
• Salt & black pepper powder to taste
Methods:
Set a wok on medium heat, add oil & butter, add freshly chopped parsley leaves and sauté briefly for a minute. Add the cooked rice and salt & pepper to taste, toss well and cook for 2-3 minutes. Herbed rice is ready, serve hot.
Assembly Ingredients:
• Sizzler pan
• Cabbage leaves
• Grilled chicken
• Herbed rice
• Sautéed veggies
• Garlic pepper sauce
Methods:
Heat the sizzler plate until its smoking hot. Spread the cabbage leaves over the smoking hot sizzler pan. Place the herbed rice, sautéed veggies, over the sizzler pan, add grilled chicken over the rice and finish by pouring the hot garlic pepper sauce. Add few pieces of cold butter on the sizzler plate below the cabbage so the pan to give the sizzling sound. Your chicken sizzler is ready to be served, Enjoy the hot sizzler with its sizzling sound that’s like a music to your ears.
