How to Make Shokupan Bread | Apple Cinnamon and Cinnamon Raisin Loaf Variants

Here’s a follow up to our most watched video to date: Make Shokupan | Bake Japanese Style White Bread This time we used a different shokupan bread recipe base for these Apple Cinnamon and Cinnamon Sugar Raisin bread loaves. The results were amazing with the soft and airy texture to be expected from shokupan made even better by delicious fillings. This is a fairly involved baking project but it's well worth the effort. Ingredients Dough 8T unsalted butter cubed and softened 585g bread flour 76g milk powder 67g sugar 10g instant yeast 312g warm water 1 large egg 1.5t salt Apple Filling 2 apples diced 31g sugar 1t cinnamon Cinnamon Filling 56g confectioners sugar 1.5T cinnamon 1/2t vanilla 85g raisins 1 large egg for egg wash Directions Combine flour, milk powder, sugar, yeast, water and egg Mix for 2-3 minutes Rest covered for 20 minutes Add salt and mix for 7-15 minutes until dough is smooth and clears sides of bowl. Add butter and mix until fully incorporated. Fold dough over itself by hand by folding into the middle. Rotate 90 degrees and fold again Repeat for a total of 8 folds. Rise in warm place for 45 minutes. Repeat folding process and rise for another 45 minutes or until doubled. Prepare loaf pans by greasing or using baking paper. Divide dough in half. Roll out dough into 30 by 16 cm (12x6in) rectangle. Fold like a business letter then roll away from you into and form a ball. Roll this ball out into a 45cm x 18cm (18x7in) rectangle. Spread filling evenly leaving a border around the edges. Roll rightly and pinch seam shut. Dust with flour and rest while preparing the second loaf. Cut roll in half and braid. Let rise in baking pans in warm place until doubled in size again. Brush with egg wash. Bake in 176C (350F) oven for 25 minutes or until crust is desired color. Use foil to tent loaves. Reduce temperature to 162C (325F) and bake 15-20 minutes longer. Internal temperature should be 93c (200F) Transfer to wire rack to cool and slice after 2 hours. Recipe based on test kitchen recipe.
