Homemade Pierogies | | Scratch Cooking

Today I'm sharing a recipe for homemade pierogies. They do take a bit of time to make, but you can make a bunch at a time and freeze them. Plus, you probably have most of the ingredients to make these in your pantry. Recipe from Eat Well on $4 a day Good and Cheap 2.5 cups flour, plus more for shaping dough 1 tsp. salt 1 cup yogurt or sour cream 1 egg Mix these together for dough. Add more flour if it's too sticky, add water if it's too stiff. Filling: cooked potatoes to equal 2 ish cups, mashed cheddar cheese dijon mustard garlic mix together. Roll out dough until thin, cut circles about 3 inches big. Place a spoonful of filling in the middle and pinch edges shut. Boil several at a time in a pot of boiling water, until they float, about 1 minute. Drain.
